I know, this is pretty simple stuff … but back to my cooking philosophy: so much of the world of food is get-it-done, working. Such as it is for cottage potatoes, and such it is in my recipe for pancakes in a skillet.
Somewhere else on the web I read that you don’t fry pancakes, you “griddle” them. Of course, that would mean you actually have a griddle. I use a cast iron pan. But the directions remain the same either way. An electric skillet generally gives more even heat. Unfortunately a lot of them use a cheap Teflon coating. Not the sort of thing that anyone wants to use to feed their family, anymore.
This is my recipe for pancakes:
Pancakes:
- 3 cups flour
- 1 1/2 TBSP baking powder
- 1/2 tsp salt
- 2 TBSP sugar
Sift those together into a bowl. Then mix in a small bowl or 4 cup glass measure:
- 3 cups milk
- 3 eggs
- 1/4 cup oil
Whisk together (which means stir them well enough so the eggs are broken up and incorporated, if you don’t have a whisk, use a fork) and pour into the dry ingredients. Mix together with a wooden spoon, just until the big lumps are broken up. There will still be a few little lumps (size of a pencil lead).
The video tells how to fry them. When they are done, stack them on a plate and put butter or margarine on each one as it is finished. We usually eat them with syrup, but on fancy days, you can service them with bananas and/or strawberries (cut up) and whipped cream.
